Cucumber Muffins

Good morning. These muffins, I make it yesterday night as my breakfast today. I would like to share my recipe at here. Actually, this recipe had been modified with just exchanging some ingredients. So, the original recipe is telling about making pumpkin muffin. I just instead of the pumpkin with the cucumber. And also, the processing method, like baking temperature and baking time, I do some modification on it because of the oven and muffin tin used which aren't same as the pumpkin recipe. Thus, you may do some changing on the baking time and temperature for avoiding the failure. 


My recipe:

Tool used:
Non-stick muffin tin, bowl, grater

Wet ingredients part:
2 eggs
3/4 cup or 150 g sugar
1/2 cup or 120 g cucumber
1/3 cup or 80 ml veggies oil
4 tbsp or 60 ml melted butter
1/2 cup or 120 ml water

Dry ingredients part:
1 1/3 cup or 160 g all purpose flour
2 tsp or 10 g baking powder
1/4 tsp or 1.25 g baking soda
1/2 tsp or 2.5 g salt

Method:
Shred the cucumber by using a grater.
Whisk the wet ingredients to combine in a large bowl.
Whisk the dry ingredients to combine in a smaller bowl.
Add the dry ingredients slowly into the wet ingredients to combine while whisking gently.
Next, fill battle until 3/4  full of a muffin tin.
Preheat oven to 200 Celsius.
Bake for 15-20 minutes, then, allow cooling completely.

Next time, I will try to use carrot making the muffin or both of them.
